Want a simple low fat healthy Mushroom Soup to warm you up?


Who else has totally over indulged over the Christmas period? 

Who else is struggling to get back into the swing of healthy eating after nearly a month, of "Go on, it's Christmas"

Want a recipe that's super easy to make? Super tasty and low fat and high in nutrients? Why not try my mushroom soup. 




So this is how you make it?..

1 x punnet of mushrooms (I use chestnut) (roughly 250g)
2 x cloves chopped garlic
1 x white onion
1 x chicken stock cube
500ml water
salt & pepper for seasoning.

Now if you're the proud owner of a soup/smoothie maker like me, band it all in there and turn to the smooth setting and it will ping at you in 25 minutes when its done.

If you don't, roughly chop all ingredients, add to a pan, bring to the boil and simmer for 20 minutes. Use a hand whisk to blend until smooth. 

Voila! You are done. It makes roughly 4 portions and is super tasty. If you wanted to make it that little bit more indulgent, when serving swirl in 1 x level tablespoon of creme fraiche and sprinkle some chopped chives on top.
